Just take it apart, put it back in the box until next time. Done this one several times. Surprised it still has all the pieces.

I’ve tried doing puzzles and they just never got their hooks into me…

Not too long. It’s an easy picture and only 300 pieces.
The main reason to do puzzles is if you want to spend time with someone and want something to do together.
